What you will do as a Fish Monger/Guest Consultant

  • Service & Guest Experience
  • Acts as a Milos brand ambassador: Undertakes all duties and responsibilities while upholding core company values.

Team Collaboration

  • Works closely with chefs and kitchen staff: Ensures that the marketplace is stocked with a diverse selection of high-quality fresh fish, coordinating with the culinary team to meet the needs of the day’s service.
  • Supports FOH Staff: Assists servers and other FOH staff in understanding the fish selection, providing them with the knowledge they need to answer guest inquiries confidently.
  • Participates in briefings: Attends pre-service briefings to discuss the day’s fish offerings, special requests, and any relevant guest preferences or dietary restrictions.

Organization & Cleanliness

  • Maintains a clean and organized marketplace: Ensures that the fish display and workspace are kept clean, organized, and stocked with the necessary tools and supplies.
  • Inventory Management: Assists in managing inventory levels, ensuring that all fish are properly stored and rotated to maintain freshness.
  • Prepares the marketplace: Sets up and breaks down the marketplace area, ensuring that it is visually appealing and ready for service.

Compliance & Safety

  • Adheres to health and safety standards: Follows all health, safety, and sanitation regulations, ensuring that Fish are handled and stored in a manner that guarantees the safety and well-being of guests.
  • Monitors quality: Inspects all fish deliveries and maintains strict quality control, rejecting any items that do not meet Milos’ standards.
  • Reports Issues: Promptly reports any issues with fish quality, service, or safety to the management team.
  • Guest Interaction: Engages with guests in the marketplace, providing expert guidance on cheese selection, including flavor profiles, aging processes, and pairing suggestions.
  • Cheese Preparation: Prepares and portions fish according to guest specifications, ensuring that each order meets Milos’ standards of quality and presentation.
  • Showcasing Quality: Demonstrates the quality and uniqueness of the fish on offer, educating guests about the sourcing, production, and artisanal practices behind each selection.
  • Menu Knowledge: Collaborates with the kitchen team to stay informed about daily specials and menu offerings, ensuring that guests receive accurate and up-to-date information.
